Leftover Pasta

This blog was a source of joy for about a month earlier this year. I had fun writing it on a regular basis, but life got complicated and I stopped caring about writing about my midday eating habits. It, in itself, was a satisfying meal of steaming creativity. Using a simple meal as a springboard [...]

Roast Beef, on Wheat

Today, I ate a roast beef sandwich with cheese, pickles and wasabi mayo. Wasabi mayo is, of course, the lynch pin that holds all sandwiches together for me now. I also had a glass of Trader Joe’s mango lemonade, which is quite a delectable treat of its own. Come to think of it, the wasabi [...]

Mojito Chicken Over Rice

Today, I ate a true Cuban fiesta in a bowl. The original fiesta occurred last night, however. Today was the festive leftovers.
The problem is that I spent my morning at the dentist, so eating is kind of weird right now. I’m never clear on when/what/how long I should wait to eat after getting a tooth [...]

Turkey Sandwich With Wasabi Mayo

Today, I ate a turkey sandwich with havarti cheese, pickles and wasabi mayo on wheat. Havarti sounds like a fancy cheese and it tastes pretty good, but it’s actually the cheapest sliced cheese that Trader Joe’s has to offer. As for the wasabi mayo, that was probably one of the better purchase decisions my wife [...]

Turkey and Spinach Meatballs

Today, I ate leftover turkey and spinach meatballs. They are a delicious combination of turkey, spinach, Parmesan cheese and love, balled up for your digestion pleasure. There was bread involved as well, but no pasta. You’d think there’d be pasta but, dear readers, your favorite lunchtime author is full of surprises.
For instance, did you know [...]

Calzone

Today, I ate a homemade calzone containing ground turkey, spinach, portabellas, broccoli, marinara, Parmesan and mozzarella. I am aware some of my fellow lunchers are suspicious of calzone and its cousin stromboli. But I submit that, when you make it at home, stuffing the bread with your own homemade concoctions, baking it just to your [...]

Eggs on a Raft

Today, I had eggs on a raft for lunch.
Not familiar with the meal, you say? Then you, dear reader, must have fallen off the turnip truck shortly after being born yesterday. I’m not sure what my intentions for the previous statement were, but I do know that if you have never had eggs on a [...]

Another Peanut Butter Thingy

Today, I ate another peanut butter, banana and honey sandwich. I am not denying I only made it because I am lazy and didn’t feel like making anything else. The bananas were more fresh than they were last time, but I am going to need to buy some more honey and peanut butter. Trader Joe’s, [...]

Burrito

Today, I ate a chicken and green chile burrito. The corn salsa, I added myself. Ingenuity!

Pasta and Vegetables

Today, I ate leftovers from dinner last night: rigatoni with olive oil, asparagus, spinach, steamed mushrooms a dash of basil and a pinch of parmesan cheese. Healthy, tasty, and all around one of the more satisfying lunches in the past few weeks.
